Fry the Chickfree on a pan at medium to high heat for 3 – 4 minutes until the pieces turn golden.
If you want you can warm the bread in the oven or the microwave for a minute or two, it is important that you keep your eye on it. Put some water on the both sides of the bread before putting it in the oven to give it a softer feel.
While you are warming your bread, rinse the lettuce, the cucumber and pea shoots, and start slicing the cucumber, potatoes followed by chopping the cherry tomatoes into quarters.
Next step is to find a bowl where you can mix the plant-based cream and chopped chives together.
Now to the assembling of the pita! Pour a little dressing into the pita pocket and then add the lettuce, Chickfree and tomatoes together with the cucumber and cooked lentils. Repeat the process as long as you have room for it.
Finish with a layer of Chickfree, dressing and pea shoots.
