How to replace non-vegan products

It’s no secret that most of the “classic” cakes have ingredients, such as egg, milk, and butter, but do not fear!  Many of the cakes have already been made vegan, and you can find thousands of recipes online. However, if you can’t find a vegan version of a specific cake, it’s a great opportunity to experiment with substituting products on your own!

So you found some recipe that needs a vegan version, what now?

Before deciding upon a replacement for a non-vegan product, you have to consider consistency. If the cake needs cold butter, you can use solid Vegan butter, such as our NATURLI’ Vegan Block. But if cake calls for melted butter, you can try out melted coconut oil, olive oil, or applesauce.

Dairy replacements

Milk has many substitute variations, therefore, it should not be the main problem while making a vegan cake or pastry. Almond, soy, coconut, oat, hemp, and even quinoa, pea milk, you name it! In bakeries, many people prefer to use soy milk for its high protein content and because it reacts in a way similar to milk.
Moreover, a great and healthy substitute for butter can be pureed fruit. Applesauce, butternut squash, sweet potato, and pumpkin puree give the recipe a creamy, thick texture without adding overpowering flavour, and just a bit of sweetness to your vegan pastry. And of course, in most of the stores, it is possible to find Vegan butter and oils, which can also serve as a replacement.

Egg replacements

Eggs can be replaced with chia or flaxseed egg. It is usually made with ground flaxseed or chia seeds combined with water. When the seeds have absorbed the water, they become thicker in texture. Mashed banana can also be a good egg substitute. It’s recommended to use more ripe bananas, with spots and brown peel.

Aquafaba, also known as the liquid in chickpea cans, is another good replacement for egg whites. It goes great in vegan brownies or cake base! Aquafaba is also a great ingredient for making macarons, pavlovas, or cake fillings.

Sweet replacements
